It is clear when you enter the Sosein in the Franconian town of Heroldsberg that this restaurant is different: A display embedded in stone presents the menu on the façade of the time-honoured building. Guests ring the bell. The hosts welcome them into a rather private atmosphere. All of the guests then begin with the food at 8pm.

The cuisine at the Sosein: of the finest quality, but always grounded. Franconian at heart and with no airs and graces. Everything revolves around the product, around nature, around the best taste from every individual component.

Felix Schneider, who opened the Sosein together with Jens Brockerhof and Johannes Müller in October 2015, stands for the very best taste. The 30-year-old chef earned his first Michelin star at the Aumers la Vie, and follows his concept not just in the kitchen, but in the garden too. "I have my own kitchen garden in which I grow 40 different varieties of tomatoes, amongst other things." He is fascinated by the different colours, shapes and characteristics of the various varieties.

Schneider complies with the rhythm of nature. Only those ingredients that are available locally are used in the kitchen.

He also talks regularly with regional suppliers, from whom he sources the majority of his ingredients and who agree with his philosophy. He makes long-term plans with these suppliers. He trusts them. "Quantity isn't that important for us, but the quality must be right. Here in Franconia there is an unbelievable number of people who cultivate old animal breeds or old varieties of vegetable that you would struggle to find anywhere else. Mostly to satisfy a passion of theirs. For me as a chef, it is a real stroke of luck."

The consequence of this exceptionally regional and seasonal approach: There is no menu in the Sosein. Felix Schneider looks for, and finds, the best that nature has to offer at that moment, whatever the season. This creates a straightforward menu.

Enthusiasm for the Heroldsberg restaurant spread like wildfire amongst gourmets during the first weeks and months after the opening. The gourmet guide Gusto named the Sosein "Newcomer of the Year" and awarded it 7 out of 10 pans and an upward arrow. – There is great hope for a successful 2016.
