Brewing beer at 1,000 metres above sea level

If you stand at the foot of the Grünten and start climbing, you will pass small streams and grazing cows, and gradually leave everyday life safely behind you. Some 1,000 metres up, walkers can find fantastic views over the rolling meadows of the Allgäu, and a brewery. Here, in the idyllic Upper Allgäu, beer sommelier Hans-Hermann Höss and brewmaster Berni Göhl create their speciality beers. And they don't just brew in a brewery; instead, and appropriately for the elevation, they do it in a former ski lift.

``That is the perfect place to create new beers.``

How did you come to use an old ski lift as a brewery? "Berni's parents used to operate the ski lift. When the business folded, we thought to ourselves: That is the perfect place to create new beers", says Höss. Both the imposing alpine landscape and the proximity to home played a big role in the decision. You can create new beers with great authenticity when you are surrounded by mountains and cows.

In the alpine brewery, a search for a conventional wheat beer or pale ale would be a search in vain. Instead, it is craft beer that is brewed at this very original place of work. 300 bottles are produced manually within an hour. Individuality and authenticity are clearly very important to the two men. As such, limited editions are brewed and filled by hand just twice a week in the alpine meadow.

``Squid aroma in a beer is not our kind of thing.``

"I completed a beer sommelier course in Chicago three years ago. It taught me about craft beer and I came to love it". Hans-Hermann Höss experienced a thing or two during this time. It is above all the "young crazy types" who stayed in his mind. They try everything and even mix squid aroma in their beer. The two men don't think much of this idea though. The Bavarian Purity Law is always the priority. However, it is possible to create exciting varieties and combinations with different hops within these restrictions. The men unearthed old hops varieties and brought them back to life.

Emotions are the catchphrase when it comes to creating and enjoying a beer. "I properly fell in love with our first beer and it is still my favourite. We drank the first five-litre keg with eight of our friends. The first brew was a real hit and everyone loved it", explains the beer sommelier.

``A beer must tell a story``

A long, cold storage played a big role here. The beer connoisseurs give their treasures the necessary time to develop flavour and aroma.

The brewer repeatedly states with body and soul how important culture is for him during our chat. He believes that people should experience it, whether up close on location or through the enjoyment of one of their craft beers. "The concept of Bavaria plays a great role for us. We wear our Lederhosen and Dirndl when we go abroad too. In doing so, we are carrying a bit of Bavarian culture into the world."
